▶️ PASTA SALAD RECIPE INGREDIENTS:
👉 Pasta Salad Dressing:
1/2 cup / 125g Plant-Based Yogurt (I have added oats yogurt, but non-vegans can use regular yogurt just adjust the quantity to your liking)
1/2 cup / 125g Vegan Mayonnaise (Non-vegans can use regular mayonnaise)
1 Teaspoon Dijon Mustard
1+1/2 to 2 Tablespoon White Vinegar or White wine vinegar
Salt to taste (I have added 1/2 Pink Himalayan Salt which is milder than the regular salt. NOTE THAT I HAVE ADDED SALT TO THE PASTA WATER WHILE COOKING THE PASTA SO ADD THE SALT ACCORDINGLY)
1 Teaspoon Sugar or to taste
(NOTE: I have added organic cane sugar but you could also add liquid sweetener of your choice eg. Maple syrup, agave etc. just adjust the quantity to your taste)
1/2 Teaspoon Ground Black Pepper or to taste
1/8 Teaspoon / a pinch of Cayenne Pepper (OPTIONAL)
3 Tablespoon / 9g Fresh Dill - finely chopped (If you find the flavour of dill too strong then reduce the quantity)
👉 To cook pasta:
200g / 2+1/4 cups approx. Rotini Pasta (or macaroni pasta)
8 to 9 cups of Boiling water
Generous amount of salt (I have added 1/2 teaspoon of pink himalayan salt which is milder than the regular salt)
👉 Other Ingredients:
3 cups / 320g (tips and seeds removed) / 1 English Cucumber (whole 433g by weight with seeds) - Remove the seeds of the cucumber and the tips and then slice it
1/2 cup / 70g Celery - chopped (1 celery stalk approx.)
1/2 cup / 65g Red Onion - thinly sliced
▶️ METHOD:
👉 To cook pasta:
Bring 8 to 9 cups of water to a boil and add 1/2 teaspoon salt. Add the dry pasta and cook as per package instructions. Once cooked drain the pasta and rinse it off with cold water to stop the cooking process. Let it sit in the strainer to drain the excess water while we prepare the rest of the ingredients.
👉 To prepare the salad dressing:
To a bowl add the plant based yogurt, vegan mayonnaise, dijon mustard, white vinegar, salt, black pepper, cayenne pepper, chopped fresh dill and mix well.
✅ PLEASE NOTE: IF YOU LIKE THE SALAD DRESSING SWEET INCREASE THE SUGAR QUANTITY AND IF YOU LIKE IT TANGY INCREASE THE VINEGAR. It tastes good both ways.
👉Cut the cucumber lengthwise. Then remove the seeds with a spoon and chop it into slices. Chop the celery and slice the red onion as well. Transfer the chopped celery, sliced cucumber, onion and cooked pasta. Add the salad dressing and mix well. Cover and chill it in the refrigerator for 40 to 45 minutes before serving.
This recipes is perfect make ahead salad for your summer barbecue parties and also for meal prep / meal planning, as it stores in the refrigerator for up to 4 days (if stored well in an airtight container)
▶️ IMPORTANT TIPS:
👉 Add the salad dressing little at a time and not all at once and taste as you go, until it reaches the desired taste
👉 I have added organic cane sugar to the dressing but you could add liquid sweetener of your choice instead eg. Maple syrup, agave etc. just adjust the quantity to your taste
👉 IF YOU LIKE THE SALAD DRESSING SWEET INCREASE THE SUGAR QUANTITY AND IF YOU LIKE IT TANGY INCREASE THE VINEGAR. It tastes good both ways
👉 After you mix the dressing with the pasta and veggies, CHILL IT IN THE REFRIGERATOR FOR 40 TO 45 MINUTES BEFORE SERVING. This will allow the flavours to blend and it tastes good cold
👉 This recipes is perfect for meal prep / meal planning, as it stores in the refrigerator for up to 4 days (if stored well in an airtight container)

You can add a little bit of red cherry tomatoes and green onions . It’s your preference not to include the seeds of the cucumber. For me and my family, it’s always included.

I made this today and in the middle of prep I realized that the plant based yogurt I had was a vanilla one. I went ahead and used it but just increased the vinegar and omitted the sugar. I also had some edamame that I needed to use up so I just threw it in there. I loved this, it was light, filling and flavorable. Thanks for all you do to keep us all happy. This recipe has become a favorite in my family friends and neighbors! I don’t really like the vegan mayonnaise so I substitute with cashews. It gives the same creamy texture and flavor and doesn’t get runny after a while. Thanks for sharing ❤😊❤

I've never seen an English cuc that needed deseeding. In fact, the ones sold here in the southeastern US, have no viable seeds at all. They are 100% edible, the English cucumber seeds. Interestingly the English cucumber is also known as the seedless cucumber. This one is certainly looks like a winner for dinner!

Do you think it would be good with just the vegan mayo instead of the vegan yogurt? I don’t know a vegan yogurt brand that has a taste that would compliment a pasta salad but if you have any recommendations please let me know
I use the Kite Hill brand of unsweetened plain vegan yogurt, and it tastes great with this recipe. I suppose you could also omit the yogurt and double the vegan mayo, although that would make it richer-tasting with more fat. That's not a bad thing, though. It depends on how light or rich you want it to be. I really think any vegan yogurt would work, though, as long it's not flavored with vanilla or fruit.
My vegan daughter hates celery but likes fennel. Would fennel be a good substitute for celery in this recipe?
Sure you could do that but note that the end taste will be slightly different but still be good :)

That measuring cup is for wet ingredients. Is dry pasta measured in liquid oz now?
It still measures the same. She also put grams for those of us who like to weigh ingredients.
why remove seeds?
Please don't rinse cooked pasta. You lose starch that helps adhere dressing.
You remove the starch for healthiness. Starch turns to sugar
@@marieconway6600 Yes, PASTA is starch, so the amount of starch removed by rinsing, is insignificant compared to the amount left behind. So let that little bit stay and provide its admirable emulsifying properties.
What I do is reserve a little of the boiled water and add to dressings. But still rinse the pasta to stop the cooking process.
